I'm afraid our Saturday mornings look quite different to sitting down and watching James Martin at the moment... We live in hope though! FYI, They are crispy smoked potatoes with truffle oil from fresh Wiltshire truffles and aged UK cheese. So just a little nod to the original!

Ike-jime cuttlefish, braised in its own ink, finished with its liver. The mantle served raw with roast chestnuts and finished with cold pressed rapeseed oil and broccoli flowers. In the restaurant this week, while the sea delivers it!

Wiltshire truffles stored w/ organic eggs for the past week. Due to their porous nature, they have absorbed a strong truffle aroma & are being served as (ultimate) Scotch eggs in the pub, wrapped in pork mince from a local Oxford Sandy and Black pig we have dry aged for 6 weeks!

Each plate will have different parts of the ray served with slow cooked cabbage, a sauce of monkfish liver (another underappreciated part of another fish), celery and pickled elderflowers.

We're currently wood-roasting these line-caught cuckoo rays whole for the restaurant set menu. Typically, only the wings are served, discarding the loins, cheeks and tail which hold some of the best parts of the fish.
