A comforting dish for this dreary day using herbs from my friend’s garden. Fresh oregano in the meatballs that were cooked in my homemade marinara. The meatballs are served over spaghetti and finished with homemade basil and oregano oil, fresh oregano and shaved Parmesan

A nice, light summer lunch: chicken topped with basil, fresh mozzarella and homemade marinara. Served with a slice of polenta with tomato, marinara, basil and oregano oil and finished with fresh oregano from my friend’s garden. Tube polenta is pretty cool!

I just blended the herbs with olive oil, brought them to a bowl, let them steep for a bit and then strained them. I’ve heard you can freeze herbs, too

Thanks to my friend for dropping by with some fresh herbs from her garden. I made chive, basil and oregano and sage oils. You can put these oils on everything! Salad, meat, pasta, use as a finishing oil for an entree, dip bread in it and so much more!
