So, what's the right SMTP/IMAP client to use on iOS? I use K-9 Mail on Android, but asking for a friend who uses iOS...

Be careful with Outlook.
I don’t know if the problem that @ShellDozer found also exists on iOS or not.

Well, I just tried the Android version on a test account and... It doesn't seem to actually send emails. To anywhere. It claims it sends them but then they don't arrive. And I can't find the SMTP settings anywhere. This is with the autodetected IMAP config.

Someone I know recently looked through the iOS mail apps and found all the top ones scan all your emails (written in privacy policy). It appears only mail.app is on device, others are cloud based and useless if email is behind a vpn.

Just use the mail.app that comes with your iOS. It works.

If you can accept the UX being horrible, undiscoverable, and a downgrade from the past years, then yeah, it is a great choice.
It is my choice as well. And I hate it every day.
