A thing we once did at : Presenting RFCs! 2-3 people sign up a week or 2 before the meetup to present one of the open RFCs and guide a discussion (similar to your RFC sniping, but a bit more preparation)

And of course the way: a hack’n’learn. Open the door, give people a desk and let them work on their own project for 2-3 hours.
