Basically, the adtech industry is selling your “attention”, their version of subprime mortgage loans. Because the way we measure attention is basically made up and often fraudulent, we are all buying and selling a whole lot of junk. And the value just keeps going up and up.📈

Sous vide is the easiest way. But if you want to roast it, might want to consider a boneless one...or just nice ribeyes. If you go with the bone-in, cut the bones off, sear the meat on all sides, tie the bones back on, and roast.
