Yes, there is a lot of data that can be extracted with full file system acquisition only. So with GrayKey (if compatible with particular iOS version; GrayShift do not yell anything on 11.4.1); or through jailbreaking (free).

As for deleted data recovery - that is all about SQLite databases. Most of them (including texts) are available in iTunes backups.
