Condiment for the dish is made by frying the spring onions - here in copious amounts of Benton's bacon drippings and tiny bit of sugar - and adding dried shrimp rehydrated in Shaoxing wine until its all brown, but not burned.

Shanghai food. The meat was a bit too salty, dumpling was pretty good, sweet and sour pork was crispy. @ Shanghai Shikumen Fine Cuisine
