CHOOSING SUSHI I would start light. Flavor & texture should increase. I begin w/ fluke, flounder & kawahagi. Then to tuna; akami, chutoro & toro. Maybe clams & octopus. Finishing w/ eel, mackerel, aji & uni. What is your magic combo?
