A key application of this research is to decipher links between chemistry + taste. Applications include standardizing food labels, such as spiciness by capsaicinoid content. 's sour taste can be tracked to the conversion of citric, to lactic, to acetic acid. Very cool.

Remember learning about ecological succession in grade school? Different communities of organisms replace each other as the environment develops. similarly has a form of " succession". This effect has been studied by Korean scientists since the 1960s.

The speaker is Wan Soon Park, PhD - adviser of the Association of Korea. Cool facts: There are 350 types of Kimchi! Kimchi, unlike other pickles, are naturally fermented. It does not undergo sterilization or pasteurization, and contains live microbes.
