Harvest continues. Beans about a quarter done = 25 cups in the freezer so far. Doing pickles this afternoon. Little sitting area in the garden to enjoy the veggies growing.

Dug the remaining onions today. Variety = Copra - a good storing onion. Everything placed on a drying rack for 1-2 weeks.

Four hours yesterday spent peeling shallots before dry salting overnight to remove moisture, giving a lovely crunch. Shallots brushed & salt removed before putting in jars & pickling. The salt will be dried in a low oven before being reused.

Today I’m making 2 big pots of goulash with my garden & grassfed beef 😁❀️🌱πŸ₯© one pot for my house & one for my kids apartment. I love that I have grown enough for for my adult children too! They’re eating good food & it saves them money πŸ’΄πŸŒ±πŸ…β€οΈ
