Hi, just seen, am abroad atm. We've got commercial ovens and bake about 20 degrees less than domestic ovens but agree on overmixing comments. Most needs much less. Just mix until dry/wet incorporated in your mixer, that's it. No need to do more. Hope that works!!

So many of recipes are perfect substituting flour - banana bread, rhubarb&cornmeal cake, courgette cake, vic sponge.... this one a winner for the lunchboxes tomorrow.
