Had a Spanish Tapas night last night and finally found an accompaniment to Jerusalem Artichoke Risotto. It has the body to stand up to the cyanin but still allow the flavours from the artichoke to come through together with the citrus in the sherry

Misty morning in Jerez, visiting The water from the well in the courtyard is used for the sprinklers inside the bodega, used to moisten the floor every time humidity drops below 70%. This is important for the health of the flor.
