A new round of future . Pork loin with cure #2, salt, and a whack load of hot pepper paste. Going to give it a few weeks in the vacuum bag, then rinse, more paste, wrap in pasted hog skin, and let it drop 35% weight in the curing chamber. Hoping she's nice and spicy!

Basturma. I cured this sirloin tip roast for a week, then dry aged it for NINE FULL WEEKS. Sliced paper thin to pair with sliced baguettes and Havarti cheese.
