It's easy to prepare ! Try Acorn Squash Stuffed w/ Brown Rice, Mushrooms & Cranberries. It's a pretty dish & perfect to serve anytime this winter. Bonus: roast the seeds from the squash to nibble on later!

Fixed Stuffed Acorn Squash using . Delicious! I I didn't have craisins so substituted mission figs. Think I should have used my golden raisins instead because of the texture. Still good.

Do you eat the skin on your acorn squash? If not, it is so good roasted. I love this colorful and delightful squash and eat it every chance I get. This recipe is so simple and delicious!
