Calved outside in yesterday’s sun, this young man is a Dexter x Irish Moiled, two of Ireland’s native breeds. One of Ireland’s oldest breeds Irish Moiled are thought to have have originated from County Down, Leitrim, Donegal & Sligo.

Day 10 “Operation Streaky Bacon”. After 5 days curing and 5 days hanging, we have proper rashers. It could be hung for longer if wanted but I want a rasher sangwich for me tea 😉
