So. After all that coaching and practice, I pretty much nailed the Sidra pour. Lovely tastings with engaged guests. Good to be talking about & showing the delights of natural cider. Got in some chat about real Cider from these isles too.

Before last night’s tasting; a bit of coaching from Nacho, from Orviedo, the art of Escanciar; pouring the cider from above head height into a thin wide-necked cider glass at hip height. Makes the acetic acids more volatile, ramps up the aroma, texture & flavour

One of the most tannic rich ciders I have ever tasted! Those phenolics are singing...wood, leather, tabacco. Gotta get me some more of this! If you haven’t tried this it is right up your palate!

this week is a fantastic keeved creation from & it’s an evolver. Almost wished I’d filmed 30 mins later, warm spice of clove and cinnamon starting to appear in the nose & palate. It’s a corker (literally)
