Losing both thumbs peeling the pistachios was worth it. Making your own pesto is very easy. This one was a blend of basil, mint, parsley, olive oil, garlic, pecorino romano & pistachio (of course).

The oven ‘fried’ chicken worked out really well. Not greasy, but very crispy. The potatoes were grilled. So along with the homemade slaw, it was an all-round health(ish) chicken & chips.
