Since chocolate flavour comes from cocoa solids, most don't consider products with only cocoa butter (e.g. white chocolate) to be 'real'.

Where it gets confusing is some manufacturers referring to 'cocoa mass' which can include both cocoa solids and cocoa butter.

However, cocoa solids are, by strict definition, the non-fatty portion of the cacao seed, which is why cocoa butter isn't a cocoa solid.
