Got a Hearthstone 5.8 from for a little while to give it a test run leading up to my pizza class. Looks cool! Huge! Probably fit 3 - 14” pies at a time. First test is Friday!

400 is a little much no doubt, but I have a number of trophies that say hot and fast is just fine. 275-325 is a good spot for amazing ribs when done correctly.

Yea - you need something commercial. You can do more food on the smallest FEC vertical than you do now. If you are considering that price range, shop around. Lots of choices, not limited to pellets either, but I’m a fan of Cookshack no doubt.

Cookshack is an amazing choice! Not cheap, but the best pellet cooker out there for mass catering. By far. FECs are $$$. I should have sent you that direction too.
