. if you ever get a chance to get the palmas series, highly recommend. They show the natural (literally) progression from fino to amontillado. Amazing and delicious.

Antonio Flores is such a treasure, if you ever get the chance to learn from him at a seminar or in Jerez, I highly recommend you do. Brilliant, charming, kind. He’s up there with Broadbent, Johnson, Ray.. Absolute legend. 🙏🏻❤️

Interesting thread that surfaces both the enormity of modern-day media blockbusters, as well as how they're overlooked. By hours, YouTube is the biggest media anything on earth > Gaming content is its biggest category >> FreeFire is one of the biggest games in the world

Ah, you’re in Canada so it’s not actually thanksgiving, duh, down here the die is cast. FWIW I usually just add a little vinegar to whole milk and let sit for 5 minutes.. 70% of the flavor for 30% of the money. (For casual brines, real deal for baking/special occasions.)

💯 Internet brought most city conveniences to the country. Only drawback is many places the bars and restaurants aren’t quite there, but that’s all I did for 17 years so I’m good. I cook and enjoy the stars.

Why no soak? I still feel comfortable brining, just probably gonna have to syringe evoo instead of herb butter rub under the skin.

Same, cut mine open this morning to brine it, no chance to season under the skin. It’s a small tear but it’s *right* by the neck. Sucks.

Scarlett was a sweet girl. Ate frozen peas out of your hand, actually stepped in to save Smokey, who survived.
