If a cryptocurrency project is built on a proof of work blockchain, such as an ERC-20 token on Ethereums blockchain — Do you think that project claim they are also proof of work?

That’s simply wrong. Being on a POW chain does not validate a token as being POW. A proof of work blockchain example would be Bitcoin and the sha-256 mining algorithm. ERC-20 tokens, and any other tokens built on chains that are not distributed via Proof-Of-Work... are not POW
