A concluding resolution: when each of my girls leaves home, we will go find an antique skillet, take it down to bare metal, and season it together. And before she goes, we’ll cook breakfast on it to lay a foundation. And then she can take it with her wherever she goes. -fin-

Anyway I think I’ve run out my house’s patience for endless seasoning cycles in the oven so I’ll stop here. Good enough. Might try flax oil stovetop seasoning but from here on out I’ll just build the seasoning through cooking.

Then I cleaned per usual: some kosher salt for an abrasive and wipe down with paper towel and a light coat of oil. Looks good (pic1) Back to where it was, anyway. Still not as nonstick as my old small pan (pic2+3). I notice the Lodge steel has a matte texture—maybe a problem?

Results were mixed, I’m afraid. Bacon went great but it’s not hard to cook bacon. The test is how much scrambled eggs stick (even when cooked in the bacon grease) and the answer was: a fair amount. I deglazed the hot pan with some water and scraped a little with a spatula:

not actually looking to get a hobby—I have several. Just reflecting they don’t occupy the place in my life that I see others doing. That said, we got into cocktails while living in Nashville and I take them pretty seriously. But ingredients are SO much more expensive in Canada!

1. Y’all, it’s not a small thing that *before* the Democratic debates happen, Barber, Theoharis and the Poor People’s Campaign will have *10* candidates visit their forum to be asked questions by low-income folks. Like, that’s a *remarkably* rare thing to occur at this level.
