Margaret O'Loghlen's visit to China continues with classes today applying different colours to chocolate, making fillings and coating moulds, making 4 different coloured macaroons with various fillings and making choux buns with praline mousseline.

HTL's culinary, chocolate and pastry lecturer Margaret O'Loghlen is off in China this week to visit our partner universities and conduct guest lecturers, culinary demonstrations and workshops. Always nice to squeeze in a quick visit to the Great Wall!

Pictures from our breakfast, tour and trip to the Hodson Bay today. Both the HR manager Rachel and bar manager Brian spoke to the students. While there we met Marty Morrissey who spoke to the students and posed for a photograph.
