Excited to be running a talk tonight with on foraging and wild food through the year. 76 slides, two videos and a whole bunch of tasters from seaweeds to membrillo, it's going to be great fun.

Today we've recruited 8 extremely talented new team members and are viewing 3 potential sites in Ancoats. Mana will feature 2 state of the art kitchens, a science facility, an R+D center, an indoor garden, an aquarium, and even a place for the Chefs to have a pre-service nap!

Scarlet Elf cups pickled in sugar - it sounds really odd but they work nicely on top of deserts. think salted caramel ice cream with a couple of these one top.. # dessert

Thinking back to a fantastic project we were involved with in Norway called 'in to the woods' where we took 15 people to live in the woods, eat wild food and build wooden structures.
