Bulk-editing your products does require a subscription to one of our Commerce plans. Though you mentioned that you have a number of products and variants, manually adjusting each item's stock level while logged in wouldn't require a higher plan.

Hey Danielle! The easiest way to bulk-update the stock levels for products in your inventory would be to export your products to a .CSV, adjust their quantities, and re-import them into your site. We outline how to do so here: (1/2)
