You only use copper if there is an embedded sulfide/mercaptan that will not otherwise dissipate. But use of copper works against expression of minerality, also seems to strip the wine.

The citation about CuSO4 is a bit misleading. Winemakers tend to use CuSO4 when they detect the faintest hint of reduction (or don't), but don't think it's the CuSO4 that is responsible for the mineral character per se. In a sense, it would be the opposite.

"Mineral wines"* tend to be reductive, which is no doubt implicated in the "mineral funk." Don't think the CuSO4 plays into the character *We don't precisely know the mechanism of how grapes grown in mineral rich soil become transformed into mineral wines, but phenomenon is real.

As diversity increases, the challenge is to maintain an open mind without succumbing to no standards at all. Get out of the straightjacket but don't run around naked. The opportunity to explore that balance is a great privilege at this magical moment in wine time.

A rather interesting perspective, though I remain still a bit skeptical that "natural wines" have become the gateway portals; they still represent a rather niche market and require a bit of pre-qualification before they're selected.

You really only want to use copper sulfate as very last resort and much better to try to avoid those circumstances that would compel its use. Old vaudeville joke: Doctor, I broke my leg in 3 places. What should I do? Stay out of those places.
