Growing the grapes always is part of the winemaking process but working with brilliant grapes makes a winemaker seem much more clever than he/she actually is.

If you are fortunate enough to have inherited/married into/purchased a grand cru, it is a precondition. But we in the New World are doing most everything de novo, so we're at a bit of a disadvantage

Must agree w/ . Watching, waiting and tasting is not "doing nothing," it's just not intervening when that is the appropriate thing to do. It's a bit tedious to have to repeat, but the great sites (well-tended) often yield grapes that require minimal intervention.
