Chef, I have followed your career since Trio. I have never tasted your food, but I appreciate your work ethic, and your passion. If I ever dined at Alinea, I would expect to experience your philosophy, even if I don’t prefer what I am being served. I am paying for the experience.

This is good; we diners can be misguided at times. About 18 months ago, I sat at the hearth at Roister, waxing poetically(and cluelessly) to my date about your work- and several days later, I realized you were checking orders, and had to listen to me babble. Sorry!

Dinner at Alinea was the yardstick by which we measure all dinners. Food, atmosphere and humor were unforgettable. Can not wait to return. And now perhaps you can fill our pillow with something a little different from the ‘vaporizer’😂
