what do you think about adding some docs around block supports? I spent some time developing my own alignment settings with <AlignmentTool> to find out all I needed to do was add supports: {align: true} to registerBlockType 🤦

Took me too long to do this. When developing a WordPress site, it's likely you'll have a functionality plugin that goes with it. Put a symlink to that folder in the active theme folder, so when developing, you'll have access to both in your code editor.
